The organic veg box has delivered, inter alia, a bunch of carrots, complete with leafy green tops. I'm reluctant to simply throw them like the supermarkets do (they're green!) but the last few times I've tried to use them they've been very bitter and unpleasant. Anyone got any suggestions?

Edit: googling suggested that treating them like parsley is a possibility. So I chopped some finely and made a "parsley" and mushroom sauce to go with my salmon and veg. Yes. Not bad. Mild parsley, but along those lines.

I dunno... if you're making stock, they might be worth adding to that I suppose, but otherwise, I can't think of much use for them except garnish or compost.
