Time taken to debone a duck and a chicken: slightly less than the length of the Classic FM Xmas CD, disc 1. Not bad.

So we now have, from the outside in:
Duck
Corn-fed chicken (very yellow)
Goose leg meat
Stuffing mix (pork, ham, and leek - thank you, Sainsburys)
Bacon-wrapped pheasant breasts

All pinned together and with string round it. That's 3.8kg of meat in total: about 7.5 lbs. I'll allow around 3 hours to roast it tomorrow.

The bones and "bits" are in a pan turning into stock.

Time to clean down the kitchen, doss for a bit, then prep the veg.

I usually check out the NORAD site to see where Santa's got to, on Xmas Eve. This year, they're using Google Maps! Will investigate further....
